Creamy Coconut Milk Ice Lollies

Ingredients:

  • 1 can (400 ml) full-fat coconut milk

  • 2 tablespoons honey or maple syrup (adjust sweetness to taste)

  • 1 teaspoon vanilla extract

  • Juice of 1 lime (optional, for a zesty twist)

  • 40g melted dark chocolate

  • Fresh fruit pieces or shredded coconut (optional)

  • Toasted shredded coconut

Instructions:

  1. Mix: In a bowl, whisk the coconut milk, honey (or maple syrup), vanilla extract, chocolate and lime juice or until smooth and well combined.

  2. Add extras: For a tropical bite, stir in small chunks of mango, pineapple, or shredded coconut.

  3. Pour: Pour the mixture into ice lolly moulds.

  4. Freeze: Insert sticks and freeze for at least 4 hours or until fully set.

  5. Dip: Run the moulds under warm water for a few seconds to loosen, gently roll in toasted coconut.

  6. and enjoy your creamy, cooling treat!
